Baking the Chocolate Cake:

1. Preheat oven to 180°C (350°F). Grease and line two 8-inch cake pans.

2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.

3. Add oil, milk, vinegar, and vanilla. Mix until combined.

4. Stir in hot water or coffee (batter will be thin).

5. Pour into pans and bake for 30–35 minutes. Cool completely.

Prepare the Whipped Cream:

1. Beat chilled whipping cream with sugar and vanilla until stiff peaks form. Chill until ready to use.

Prepare the Cherry Filling:

1. If using fresh cherries, pit and chop them. If using canned, drain and save the syrup.

2. Optional: Heat cherries with a little sugar and cornstarch for a thicker filling.

Assemble the Cake:

1. Slice cake layers horizontally (if only one was baked).

2. Place the first layer on a cake board. Brush with cherry syrup.

3. Spread whipped cream and scatter cherries.

4. Add second layer. Repeat the process.

5. Cover the entire cake with whipped cream.

Decorate:

1. Press chocolate shavings on the sides.

2. Pipe cream swirls on top and place cherries.

3.Chill for 1–2 hours before serving for best texture.
