1. Coarsely crush half of the corn. Mix with flour, rice flour, chili, onion, coriander, cumin, and salt. Add a little water to form a thick batter.

2. Heat oil in a pan. Drop spoonfuls of batter and flatten slightly. Fry on medium heat until golden and crisp on both sides.

3. Enjoy with mint chutney, ketchup, or curd dip!
