1. Rinse lentils thoroughly under running water. Set aside.

2. In a deep soup pot, heat oil or ghee over medium heat. Add onions and garlic. Sauté for 2–3 minutes until soft.

3. Add chopped carrot and tomatoes. Cook for another 2–3 minutes.

4. Add turmeric, cumin, salt, and pepper. Stir well.

5. Add rinsed lentils and pour in vegetable broth or water. Bring to a boil, then reduce heat and let it simmer for 25–30 minutes or until lentils are soft.

6. Use a hand blender to blend partially (optional) for a creamy texture, or leave it chunky.

7. Add lemon juice and adjust seasoning if needed.

8. Garnish with fresh coriander or parsley. Serve hot with bread or rice.
