1. Rinse ½ cup quinoa under running water. Cook it in 1 cup water until soft (about 10–12 minutes). Let it cool completely.

2. While quinoa cools, chop all vegetables and herbs.

3. In a large bowl, combine the cooked quinoa, chopped veggies, herbs, and cheese (if using).

4. Whisk together all dressing ingredients. Pour over the salad and toss everything well.

5. Let it rest for 5–10 minutes for the flavors to absorb. Serve chilled or at room temperature.
